Roasted Half Chicken with Rice Pilaf and Steve’s Succotash
1-half of chicken seasoned and roasted.
1-cup of rice pilaf
For Succotash
2- Cups of corn cut off the cob
1- Large potato diced
8oz- Lima beans
1- Tablespoon of margarine
1/2- Tablespoon chopped scallions
1/2- Tablespoon chopped scallions
1- Tablespoon paprika
Salt and Pepper to taste
Directions:
- Season and roast chicken until it’s done about 30-45 minutes in a 350 degrees oven.
- While the chicken is cooking in the oven you can prepare your rice pilaf.
- Next step is to prepare the succotash.
- In a skillet over medium heat add your margarine and let it melt before adding your potatoes, corn, lima beans, scallions, and remaining ingredients.
- Sauté the succotash for about a minute or until the ingredients are hot all the through.
- Plate your meal when the chicken and rice is done.
